Gluten-free and grain-free with cassava: flours, starches and mixes for US bakers and food manufacturers

Gluten-free used to mean compromise: dry crumb, short shelf life, long ingredient lists. That is changing on American shelves. Grain-free and paleo lines, allergen-conscious buyers and clean-label programs have turned cassava — the root Brazilians have milled for centuries — into one of the most useful bases for gluten-free food.

Why cassava works

  • Naturally gluten-free and grain-free. Cassava is a root, not a cereal. Under FDA rules, a food labeled "gluten-free" must contain less than 20 parts per million of gluten — a standard cassava-based formulas can meet when the supply chain controls cross-contact.
  • Outside the major allergen list. US law identifies nine major food allergens — milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, soybeans and sesame. Cassava is not one of them, which simplifies allergen statements.
  • Non-GMO and organic options. Grades are available with non-GMO verification and in certified organic versions for premium lines.
  • Neutral flavor. It does not mask the taste of the product it goes into.

Premium cassava flour: the wheat replacer

Premium cassava flour is milled from the whole peeled root, not only the starch. Well-processed, it behaves as an all-purpose flour: in some formulas it can replace wheat close to 1:1, and in most it reduces the number of ingredients needed to rebuild structure. Bakers use it for breads, cakes, muffins, cookies, brownies, pizza bases, tortillas, pasta and pancakes. Benefits reported in application work include better texture, pleasant sensory profile, fresh keeping and a reliable shelf life. Grades range from regular and premium flours to pre-gelatinized cassava flour and organic versions.

Starches that complete the system

  • Native tapioca starch for binding, crispness and structure.
  • Sour tapioca starch (polvilho azedo) for expansion — the secret of Brazilian cheese bread.
  • Pre-gelatinized tapioca starch for cheese bread, cheese biscuits and chipa (typically 9–22% of the formula) and to hold moisture in soft cakes.
  • Cheese bread mix that replaces starch, sour starch and modified starch in one ingredient, removes the scalding step and standardizes the final product.
  • Special low-moisture starch, extremely dry and low in microbial count, used in cookie and biscuit fillings.
  • Tapioca pearls (sago) for desserts, cereals and bakery inputs.
  • Cassava maltodextrin and dextrins as carriers, for flavor encapsulation, bakery premixes, instant sauces and powdered drinks.

What a manufacturer should demand

For a gluten-free or allergen-controlled line, the ingredient is only as good as its documentation: technical sheet per grade, certificate of analysis per lot, gluten and allergen statements, traceability from origin to delivery, and mills audited under recognized food safety schemes such as BRCGS, with ISO 9001 quality systems and Kosher, Halal, Non-GMO and vegan certifications where required.
